Description
A delicious and nutritious quesadilla packed with shredded chicken, cheese, and creamy ranch dressing, perfect for a protein boost and quick meals.
Ingredients
- 2 cups cooked chicken breast, shredded
- 1 cup shredded cheese (cheddar or mozzarella)
- 1/2 cup ranch dressing
- 4 medium flour tortillas
- 1 tablespoon olive oil
- 1/4 cup diced green onions
- 1/4 cup diced bell pepper
- 1/4 teaspoon black pepper
Instructions
- In a mixing bowl, combine the cooked chicken, shredded cheese, ranch dressing, green onions, bell pepper, and black pepper. Mix until well incorporated.
- Heat the olive oil in a non-stick pan over medium heat and coat the bottom of the pan with the oil.
- Place one tortilla in the pan and spread 1/4 of the chicken mixture on one half. Fold the tortilla to cover the filling.
- Cook for about 3-4 minutes until the bottom is golden brown, then flip with a spatula.
- Cook the other side for an additional 2-3 minutes until golden and the cheese is melted.
- Remove the quesadilla from the pan and let it rest for 2 minutes before slicing into wedges. Repeat with remaining ingredients.
- Serve hot with extra ranch dressing for dipping.
Notes
Use leftover chicken for a quicker meal and don’t overstuff to prevent mess while flipping.
