Description

A delicious and easy high-protein chicken ranch quesadilla, perfect for lunch, dinner, or a snack.


Ingredients

  • 1 low-carb tortilla
  • 1/2 cup cooked chicken, shredded
  • 2 tablespoons Greek yogurt
  • 2 tablespoons Laughing Cow cheese
  • Ranch seasoning (to taste)
  • Cooking spray or oil (for frying)


Instructions

  1. Heat a non-stick skillet over medium heat and lightly grease it with cooking spray or oil.
  2. In a bowl, mix the cooked chicken, Greek yogurt, Laughing Cow cheese, and Ranch seasoning until well combined.
  3. Spread the chicken mixture evenly over half of the low-carb tortilla.
  4. Fold the tortilla in half to create a quesadilla.
  5. Place the quesadilla in the skillet, cooking for 3-5 minutes on each side, or until it turns golden brown and crispy.
  6. Once done, remove from the skillet, slice, and serve hot.

Notes

Use leftover cooked chicken for quicker preparation and adjust ranch seasoning to taste. Keep cooking temperature moderate for a crispy outside.
