A delicious and easy high-protein chicken ranch quesadilla, perfect for lunch, dinner, or a snack.
Ingredients
- 1 low-carb tortilla
- 1/2 cup cooked chicken, shredded
- 2 tablespoons Greek yogurt
- 2 tablespoons Laughing Cow cheese
- Ranch seasoning (to taste)
- Cooking spray or oil (for frying)
Instructions
- Heat a non-stick skillet over medium heat and lightly grease it with cooking spray or oil.
- In a bowl, mix the cooked chicken, Greek yogurt, Laughing Cow cheese, and Ranch seasoning until well combined.
- Spread the chicken mixture evenly over half of the low-carb tortilla.
- Fold the tortilla in half to create a quesadilla.
- Place the quesadilla in the skillet, cooking for 3-5 minutes on each side, or until it turns golden brown and crispy.
- Once done, remove from the skillet, slice, and serve hot.
Notes
Use leftover cooked chicken for quicker preparation and adjust ranch seasoning to taste. Keep cooking temperature moderate for a crispy outside.
