Description

Easy and delicious herb roasted potato wedges, a healthier alternative to fries that pairs well with any meal.

Ingredients

  • 4 large russet potatoes
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and cut the potatoes into wedges.
  3. In a large bowl, combine olive oil, garlic powder, onion powder, dried rosemary, dried thyme, paprika, salt, and pepper.
  4. Toss the potato wedges in the herb and spice mixture until evenly coated.
  5. Spread the wedges in a single layer on a baking sheet.
  6. Bake for about 30-35 minutes, turning halfway through, until golden brown and crispy.
  7. Garnish with fresh parsley before serving.

Notes

Make sure to cut the potatoes into even wedges for uniform cooking. Don’t overcrowd the baking sheet to ensure they crisp up better.
