Easy and delicious herb roasted potato wedges, a healthier alternative to fries that pairs well with any meal.
Ingredients
- 4 large russet potatoes
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and cut the potatoes into wedges.
- In a large bowl, combine olive oil, garlic powder, onion powder, dried rosemary, dried thyme, paprika, salt, and pepper.
- Toss the potato wedges in the herb and spice mixture until evenly coated.
- Spread the wedges in a single layer on a baking sheet.
- Bake for about 30-35 minutes, turning halfway through, until golden brown and crispy.
- Garnish with fresh parsley before serving.
Notes
Make sure to cut the potatoes into even wedges for uniform cooking. Don’t overcrowd the baking sheet to ensure they crisp up better.
