Description

Delightful Portuguese coconut cakes that bring a tropical twist to any occasion with rich flavors and simple ingredients.


Ingredients

  • 1 cup Coconut Milk
  • 1 cup Shredded Coconut
  • 2 large Eggs
  • 3/4 cup Sugar
  • 1 cup Flour
  • 1 tbsp Baking Powder


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the coconut milk, sugar, and eggs. Stir well until fully integrated.
  3. Slowly add the flour and baking powder to the wet mixture. Mix until just combined.
  4. Fold in the shredded coconut.
  5. Grease your baking pan or line with parchment paper. Pour the batter into the prepared pan.
  6. Bake in the preheated oven for 25-30 minutes, until lightly golden and a toothpick inserted comes out clean.
  7. Remove cakes from the oven and cool in the pan for 10 minutes before transferring to a wire rack.
  8. Once cooled, cut into squares or rectangles and dust with powdered sugar if desired.
