A hearty and comforting one-pan meal featuring ground turkey and potatoes, perfect for a nutritious weeknight dinner.
Ingredients
- 1 pound ground turkey
- 4 medium potatoes, diced
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup chicken broth
- 1/4 cup chopped fresh parsley
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the diced potatoes and cook for 8–10 minutes, stirring occasionally, until they’re golden and slightly tender. Remove the potatoes from the skillet and set them aside.
- In the same skillet, add the ground turkey and cook until it’s browned and fully cooked, breaking it apart as it cooks.
- Stir in the chopped onion and minced garlic. Cook for 2–3 minutes, until the onion is softened and fragrant.
- Sprinkle in the dried thyme, paprika, salt, and black pepper. Mix everything together well to ensure the meat is evenly coated with the seasonings.
- Return the cooked potatoes to the skillet and pour in the chicken broth. Cover the skillet and simmer for 8–10 minutes, or until the potatoes are fully tender and the liquid is mostly absorbed.
- Stir in the chopped fresh parsley, and your Ground Turkey with Potatoes is ready to serve!
Notes
For extra flavor, try adding peas or carrots, or use ground chicken or beef instead of turkey. Store leftovers in the refrigerator for 3–4 days or freeze for up to three months.
