Description
A hearty and nourishing soup combining rotisserie chicken and gnocchi, perfect for chilly days.
Ingredients
- 1 rotisserie chicken, shredded
- 1 package gnocchi
- 4 cups chicken broth
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup spinach
- Salt and pepper to taste
- Olive oil
Instructions
- In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery; sauté until softened.
- Add garlic and cook for another minute.
- Pour in the chicken broth and bring to a boil.
- Add the gnocchi and cook according to package instructions.
- Stir in shredded rotisserie chicken and spinach; cook until the spinach wilts.
- Season with salt and pepper to taste.
- Serve warm.
Notes
Best served hot, optionally topped with Parmesan cheese. Pairs well with warm bread or a simple salad.
