Ingredients
- 2 cups rolled oats
- 1 cup applesauce
- 2 eggs
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon vanilla extract
- 1/4 cup milk or milk substitute
- Chopped apples for topping
- Maple syrup for serving (optional)
Instructions
- Blend the rolled oats until they reach a flour-like consistency.
- Add the applesauce, eggs, baking powder, cinnamon, vanilla extract, and milk to the blender and blend until smooth.
- Heat a non-stick skillet over medium heat and pour 1/4 cup of batter onto the skillet for each pancake.
- Cook for about 2-3 minutes on each side, or until golden brown.
- Serve warm, topped with chopped apples and maple syrup if desired.
Notes
