Ingredients
- 2 cups rolled oats
- 2 apples, peeled and chopped
- 1/2 cup unsweetened applesauce
- 1/4 cup honey or maple syrup
- 1/2 cup milk (or non-dairy alternative)
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp salt
- 1/4 cup chopped nuts (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a cake pan.
- In a large bowl, combine the rolled oats, apples, applesauce, honey (or maple syrup), milk, and vanilla extract.
- In another bowl, mix the baking powder, cinnamon, and salt.
- Combine both mixtures and stir until well combined.
- If using, fold in the chopped nuts.
- Pour the batter into the prepared pan and spread evenly.
- Bake for about 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Let it cool before slicing and serving.
Notes
Serve warm or at room temperature; can be enjoyed with yogurt or a drizzle of honey. Store in an airtight container for up to three days at room temperature, up to one week in the fridge, and up to three months in the freezer.
