Instructions
- In a medium bowl, combine oats, peanut butter, honey, cocoa powder, vanilla extract, and salt. Mix until well combined.
- If using dark chocolate chips, fold them into the mixture.
- Scoop tablespoon-sized portions of the mixture and form them into cookie shapes on a baking sheet lined with parchment paper.
- Refrigerate for about 30 minutes until set.
