Ingredients

- 1/4 cup honey or maple syrup

- 1/2 tsp vanilla extract

Instructions
- In a large bowl, mix together quick oats, peanut butter, honey (or maple syrup), cocoa powder, vanilla extract, and salt until well combined.
- Drop spoonfuls of the mixture onto a parchment-lined baking sheet.
- Flatten each cookie slightly with the back of a spoon.
- Refrigerate for at least 30 minutes to set.
