Ingredients
- 1 lb chicken breast
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 4 cloves garlic, minced
- Salt and pepper to taste
- 2 cups broccoli florets
- 1 cup cooked quinoa
- 1 cup cherry tomatoes, halved
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix olive oil, lemon juice, garlic, salt, and pepper.
- Add chicken breast to the marinade and coat evenly.
- Place the chicken on a baking sheet and surround it with broccoli.
- Bake for 20-25 minutes or until chicken is cooked through.
- Once done, let the chicken rest, then slice it.
- In meal prep containers, layer quinoa, chicken, broccoli, and cherry tomatoes.
- Garnish with fresh parsley.
- Store in the refrigerator for meal prep.
