A delightful combination of lemon garlic chicken, quinoa, and vibrant vegetables, perfect for meal prepping.


Ingredients

  • 1 lb chicken breast
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 4 cloves garlic, minced
  • Salt and pepper to taste
  • 2 cups broccoli florets
  • 1 cup cooked quinoa
  • 1 cup cherry tomatoes, halved
  • Fresh parsley for garnish


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix olive oil, lemon juice, garlic, salt, and pepper.
  3. Add chicken breast to the marinade and coat evenly.
  4. Place the chicken on a baking sheet and surround it with broccoli.
  5. Bake for 20-25 minutes or until chicken is cooked through.
  6. Once done, let the chicken rest, then slice it.
  7. In meal prep containers, layer quinoa, chicken, broccoli, and cherry tomatoes.
  8. Garnish with fresh parsley.
  9. Store in the refrigerator for meal prep.
