Ingredients
- 2 chicken breasts
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 zucchini, sliced
- 1 bell pepper, chopped
- 1 cup cherry tomatoes
- 2 tablespoons olive oil
- Salt and pepper to taste
- Italian seasoning
Instructions
- Preheat the oven to 400°F (200°C).
- On a sheet pan, toss the zucchini, bell pepper, and cherry tomatoes with olive oil, salt, pepper, and Italian seasoning.
- Place the chicken breasts on the sheet pan and season with salt, pepper, and Italian seasoning.
- Pour marinara sauce over the chicken and sprinkle with mozzarella and Parmesan cheese.
- Bake for 25-30 minutes, or until the chicken is cooked through and juices run clear.
- Remove from the oven and let it rest for a few minutes before serving.
Notes
For even cooking, pound the chicken breasts to a uniform thickness. Use low-sodium marinara for a healthier option.
