A delightful dish capturing tropical flavors with marinated chicken in pineapple sauce and creamy coconut rice.
Ingredients
- 1 lb chicken breasts
- 1 cup pineapple juice
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1 tablespoon garlic, minced
- 1 teaspoon ginger, minced
- 1 cup jasmine rice
- 1 can coconut milk
- 1 cup water
- Salt to taste
- Chopped green onions for garnish
Instructions
- In a bowl, mix pineapple juice, soy sauce, honey, garlic, and ginger. Marinate chicken in this mixture for at least 30 minutes.
- Preheat the oven to 375°F (190°C). Place the marinated chicken in a baking dish and bake for 25-30 minutes, or until fully cooked.
- In a saucepan, combine jasmine rice, coconut milk, water, and salt. Bring to a boil, then reduce heat and simmer covered for 15-20 minutes until rice is tender and liquid is absorbed.
- Fluff the rice with a fork and serve alongside the baked chicken.
- Garnish with chopped green onions.
Notes
For best flavor, marinate chicken for a few hours or overnight. Use fresh ingredients for enhanced taste.
