Description

A delightful dish capturing tropical flavors with marinated chicken in pineapple sauce and creamy coconut rice.


Ingredients

  • 1 lb chicken breasts
  • 1 cup pineapple juice
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon garlic, minced
  • 1 teaspoon ginger, minced
  • 1 cup jasmine rice
  • 1 can coconut milk
  • 1 cup water
  • Salt to taste
  • Chopped green onions for garnish


Instructions

  1. In a bowl, mix pineapple juice, soy sauce, honey, garlic, and ginger. Marinate chicken in this mixture for at least 30 minutes.
  2. Preheat the oven to 375°F (190°C). Place the marinated chicken in a baking dish and bake for 25-30 minutes, or until fully cooked.
  3. In a saucepan, combine jasmine rice, coconut milk, water, and salt. Bring to a boil, then reduce heat and simmer covered for 15-20 minutes until rice is tender and liquid is absorbed.
  4. Fluff the rice with a fork and serve alongside the baked chicken.
  5. Garnish with chopped green onions.

Notes

For best flavor, marinate chicken for a few hours or overnight. Use fresh ingredients for enhanced taste.
