A comforting dish that combines crispy hash browns, creamy eggs, and savory cheese and ham flavors for a perfect breakfast or brunch.
Ingredients
- 8 precooked frozen hash brown patties
- 1 cup shredded sharp cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 1/2 cups diced ham
- 2 scallions, diced
- 9 large eggs
- 1 cup whole milk
- 1/2 teaspoon salt
- 1/2 teaspoon dry ground mustard (optional)
- 1/4 teaspoon garlic powder
Instructions
- Preheat the oven to 350 degrees F. Grease a 9×13 baking dish.
- Arrange the frozen hash brown patties in the dish in a single layer.
- Sprinkle both the shredded cheddar and Monterey Jack cheeses evenly over the top of the hash browns.
- Add the diced ham and scallions on top of the cheese.
- Whisk together the eggs, whole milk, salt, dry ground mustard, and garlic powder in a large bowl.
- Pour the egg mixture evenly over the ham and cheese layers.
- Cover the dish with foil and bake for 25 minutes.
- Remove the foil and bake for another 20 minutes until golden and a knife comes out clean.
- Allow to cool for 5-10 minutes, then cut into portions and serve warm.
Notes
For a lighter version, consider using egg whites, low-fat cheese, and adding more vegetables.
