Description

A comforting dish that combines crispy hash browns, creamy eggs, and savory cheese and ham flavors for a perfect breakfast or brunch.


Ingredients

  • 8 precooked frozen hash brown patties
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 1/2 cups diced ham
  • 2 scallions, diced
  • 9 large eggs
  • 1 cup whole milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon dry ground mustard (optional)
  • 1/4 teaspoon garlic powder


Instructions

  1. Preheat the oven to 350 degrees F. Grease a 9×13 baking dish.
  2. Arrange the frozen hash brown patties in the dish in a single layer.
  3. Sprinkle both the shredded cheddar and Monterey Jack cheeses evenly over the top of the hash browns.
  4. Add the diced ham and scallions on top of the cheese.
  5. Whisk together the eggs, whole milk, salt, dry ground mustard, and garlic powder in a large bowl.
  6. Pour the egg mixture evenly over the ham and cheese layers.
  7. Cover the dish with foil and bake for 25 minutes.
  8. Remove the foil and bake for another 20 minutes until golden and a knife comes out clean.
  9. Allow to cool for 5-10 minutes, then cut into portions and serve warm.

Notes

For a lighter version, consider using egg whites, low-fat cheese, and adding more vegetables.
