Description

A warm and hearty soup packed with seasonal vegetables and nutrients.


Ingredients

  • 2 cups diced carrots
  • 2 cups diced potatoes
  • 1 cup diced celery
  • 1 cup chopped onions
  • 3 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 cup diced tomatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 cups chopped kale or spinach
  • Olive oil for sautéing


Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions, garlic, carrots, and celery, and sauté until softened.
  2. Stir in potatoes, diced tomatoes, vegetable broth, thyme, and basil. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until vegetables are tender.
  3. Add kale or spinach and cook until wilted.
  4. Season with salt and pepper to taste.
  5. Serve warm, optionally topped with fresh herbs or cheese.

Notes

Use fresh vegetables for the best flavor. You can store it in an airtight container in the refrigerator for up to 3-5 days or freeze for up to 3 months. Adjust seasonings to taste.
