Description
A quick and healthy stir fry featuring lean ground turkey, colorful vegetables, and a homemade teriyaki sauce.
Ingredients
- 450g (1 lb) lean ground turkey
- 1 tablespoon olive oil
- 4 cloves garlic (minced)
- 1 tablespoon grated ginger
- 2 medium bell peppers (thinly sliced)
- 2 cups (200g) broccoli florets
- 1 cup (100g) thinly sliced carrots
- ½ cup sliced green onions (for garnish)
- ¼ cup (60ml) low-sodium soy sauce
- 2 tablespoons honey
- 1 tablespoon rice vinegar
- 1 tablespoon cornstarch mixed with 2 tablespoons of water (cornstarch slurry)
Instructions
- Make the Teriyaki Sauce: In a mixing bowl, whisk together the soy sauce, honey, rice vinegar, and cornstarch slurry. Set aside.
- Cook the Ground Turkey: Heat olive oil in a large skillet or wok over medium-high heat. Add the ground turkey and cook for 5-7 minutes, breaking it apart with a wooden spoon, until browned and cooked through.
- Add Garlic and Ginger: Add the minced garlic and grated ginger to the cooked turkey. Cook for 1-2 minutes until fragrant.
- Add Vegetables: Add the sliced bell peppers, broccoli florets, and carrots to the skillet. Stir and cook for about 5-7 minutes until the vegetables are tender-crisp.
- Add the Teriyaki Sauce: Pour the homemade teriyaki sauce into the skillet. Stir well to coat the turkey and vegetables in the sauce. Let the mixture simmer for 2-3 minutes until the sauce thickens.
- Finish and Serve: Remove from heat and garnish with sliced green onions. Serve hot over rice, quinoa, or noodles for a complete meal.
Notes
Store leftovers in an airtight container in the refrigerator for 3-4 days. Reheat in the microwave or stovetop.
