Ingredients

  • 1 lb ground turkey
  • 2 medium sweet potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 can black beans, drained and rinsed
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Olive oil
  • Fresh cilantro for garnish (optional)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat.
  3. Add the chopped onion and bell pepper, and sauté until softened.
  4. Stir in the garlic and cook for another minute.
  5. Add the ground turkey, cooking until browned and cooked through.
  6. Mix in the diced sweet potatoes, black beans, chili powder, cumin, salt, and pepper.
  7. Transfer the mixture to a baking dish.
  8. Cover with foil and bake for about 25 minutes, until the sweet potatoes are tender.
  9. Remove the foil and bake for an additional 10 minutes.
  10. Garnish with fresh cilantro if desired and serve.

Notes

For best flavor, use fresh garlic and onion. You can also customize the spices according to your preferences.
