Ingredients
- 1 lb ground turkey
- 2 medium sweet potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 can black beans, drained and rinsed
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- Olive oil
- Fresh cilantro for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat.
- Add the chopped onion and bell pepper, and sauté until softened.
- Stir in the garlic and cook for another minute.
- Add the ground turkey, cooking until browned and cooked through.
- Mix in the diced sweet potatoes, black beans, chili powder, cumin, salt, and pepper.
- Transfer the mixture to a baking dish.
- Cover with foil and bake for about 25 minutes, until the sweet potatoes are tender.
- Remove the foil and bake for an additional 10 minutes.
- Garnish with fresh cilantro if desired and serve.
