Description
A quick and tasty meal combining ground turkey and fresh vegetables topped with a spicy Bang Bang Sauce.
Ingredients
- 1 lb ground turkey
- 1 Tbsp sesame oil (or favorite cooking oil)
- 2-3 garlic cloves (minced)
- 2 tsp grated ginger
- ½ tsp smoked paprika
- ½ tsp onion powder
- 3 Tbsp soy sauce (low sodium)
- 1-2 Tbsp sriracha
- 2-3 Tbsp chicken broth
- 2 tsp honey
- ½ tsp black pepper
- ½ tsp sea salt (more or less to taste)
- 2 tsp corn starch
- ½ cup mayonnaise
- 3 Tbsp sweet chili sauce
- ½-1 Tbsp sriracha (more to kick up the spice)
- 1 tsp rice vinegar
- 2 tsp honey
- Rice
- Shredded carrots
- Sliced cucumbers
- Shelled edamame
- Pickled onions
- Avocado
- Shredded cabbage
- Sliced green onion
- Sesame seeds
Instructions
- In a small bowl, mix all the Bang Bang Sauce ingredients and whisk well to combine. Chill until ready to serve.
- Heat sesame oil in a large skillet over medium-high heat. Add the ground turkey and cook until browned and reaches 165°F. Reduce heat to medium-low, add remaining ingredients (except cornstarch), and mix.
- Let the mixture simmer for 2-3 minutes. Sprinkle cornstarch over the top and stir to combine. Add 2 tablespoons of Bang Bang Sauce if desired.
- Assemble rice bowls by adding rice first, layering in veggies, and spooning the ground turkey mixture on top. Drizzle with more Bang Bang Sauce and garnish with sliced green onion and sesame seeds.
Notes
Feel free to customize your bowls with different toppings and ingredients. Store leftovers separately in airtight containers for up to 3 days.
