These Ground Turkey Black Bean Enchiladas are a delicious and healthy option packed with protein and fiber, perfect for a family dinner or gathering with friends.
Ingredients
- 1 lb lean ground turkey
- 1 can black beans, drained and rinsed
- 1 cup enchilada sauce
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- 8 tortillas
- 1 cup shredded cheese (optional)
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, cook the ground turkey over medium heat until browned.
- Add chopped onion and minced garlic; sauté until the onion is translucent.
- Stir in black beans, cumin, chili powder, salt, and pepper; cook for an additional 5 minutes.
- Spread a little enchilada sauce on the bottom of a baking dish.
- Fill each tortilla with the turkey and bean mixture, roll them up, and place them seam side down in the baking dish.
- Pour the remaining enchilada sauce over the rolled tortillas and sprinkle cheese on top if using.
- Cover with foil and bake for 20 minutes, then remove foil and bake for an additional 10 minutes until cheese is bubbly.
- Garnish with fresh cilantro before serving.
Notes
Use whole wheat tortillas for a healthier option. Feel free to add other vegetables like bell peppers or corn to the filling for extra flavor.
