Description

These Ground Turkey Black Bean Enchiladas are a delicious and healthy option packed with protein and fiber, perfect for a family dinner or gathering with friends.


Ingredients

  • 1 lb lean ground turkey
  • 1 can black beans, drained and rinsed
  • 1 cup enchilada sauce
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 8 tortillas
  • 1 cup shredded cheese (optional)
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, cook the ground turkey over medium heat until browned.
  3. Add chopped onion and minced garlic; sauté until the onion is translucent.
  4. Stir in black beans, cumin, chili powder, salt, and pepper; cook for an additional 5 minutes.
  5. Spread a little enchilada sauce on the bottom of a baking dish.
  6. Fill each tortilla with the turkey and bean mixture, roll them up, and place them seam side down in the baking dish.
  7. Pour the remaining enchilada sauce over the rolled tortillas and sprinkle cheese on top if using.
  8. Cover with foil and bake for 20 minutes, then remove foil and bake for an additional 10 minutes until cheese is bubbly.
  9. Garnish with fresh cilantro before serving.

Notes

Use whole wheat tortillas for a healthier option. Feel free to add other vegetables like bell peppers or corn to the filling for extra flavor.
