Description

A wholesome one-pan meal that combines savory ground beef and sweet potatoes, perfect for busy weeknights.


Ingredients

  • 1 pound lean ground beef (90% lean or higher)
  • 2 large sweet potatoes, peeled and diced into ½-inch cubes
  • 1 medium yellow onion, chopped
  • 1 bell pepper, cored, seeded, and chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • ½ teaspoon chili powder
  • ½ teaspoon dried oregano
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup chicken broth (low sodium recommended)
  • Optional garnishes: fresh parsley or cilantro, green onions, shredded cheese, sour cream or Greek yogurt, avocado slices


Instructions

  1. Prep all your vegetables by peeling and dicing the sweet potatoes and chopping the onion and bell pepper.
  2. Heat 1 tablespoon olive oil in a large skillet over medium-high heat and add the ground beef. Cook until browned, breaking it up with a spoon, and drain excess grease.
  3. Add the chopped onion and bell pepper, and cook until softened, about 5-7 minutes. Stir in the minced garlic and cook for an additional minute.
  4. Mix in the diced sweet potatoes and spices, ensuring everything is well coated.
  5. Pour the chicken broth into the skillet and bring to a simmer. Cover and simmer for 15-20 minutes, or until sweet potatoes are tender.
  6. If there’s excess liquid, uncover and increase heat to medium-high to evaporate extra moisture. Adjust seasoning to taste.
  7. Serve hot, garnished with your favorite toppings.

Notes

Use lean meat for a healthier option. Sweet potatoes can be left with skin for extra fiber. Great for meal prep and can be frozen for later use.
