A delicious and satisfying meal featuring seasoned ground beef, roasted sweet potatoes, and a hint of heat from hot honey.
Ingredients
- 1 lb lean ground beef
- 1 yellow onion
- 1 taco seasoning packet
- 2 medium sweet potatoes
- 2 tbsp olive oil
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- 1/4 tsp cinnamon
- Salt and pepper to taste
- 1 avocado, sliced
- 1 cup cottage cheese
- 2 tbsp hot honey
Instructions
- Preheat your oven to 400°F.
- Toss the diced sweet potatoes with olive oil, paprika, garlic powder, cinnamon, salt, and pepper. Spread them evenly on a baking sheet and roast for 40–45 minutes until they are tender and golden.
- While the sweet potatoes roast, heat some olive oil in a skillet over medium heat. Sauté the diced onion until it softens.
- Add the ground beef and taco seasoning to the skillet. Cook until the beef is browned and fully cooked.
- To serve, assemble bowls by layering the roasted sweet potatoes, ground beef mixture, avocado slices, and cottage cheese.
- Drizzle hot honey over each bowl before enjoying.
Notes
To save time, peel and chop your sweet potatoes ahead of time. Feel free to substitute ground beef with ground turkey or chicken for a leaner option.
