Description

Delicious and easy Ground Beef Cheesy Quesadillas that can be customized with your favorite ingredients. Perfect for lunch or dinner.


Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • Salt & black pepper, to taste
  • 1/4 cup water
  • 8 flour tortillas (medium size)
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella or Monterey Jack cheese
  • 2 tablespoons butter or oil


Instructions

  1. In a skillet, cook ground beef and onion until the beef is browned. Drain the excess fat.
  2. Stir in garlic, chili powder, cumin, paprika, salt, pepper, and water. Simmer for 2–3 minutes until thickened.
  3. Heat a large skillet or griddle over medium heat. Butter one side of each tortilla.
  4. Place one tortilla, buttered side down, in the skillet. Sprinkle cheese, spoon the beef mixture, then add more cheese. Top with another tortilla, buttered side up.
  5. Cook until golden brown for 2–3 minutes per side, flipping carefully.
  6. Slice into wedges and serve hot with salsa, sour cream, or guacamole.

Notes

Drain the fat after cooking the beef for a healthier option. Use a mix of cheeses for added flavor. Feel free to add vegetables like peppers or spinach.
