Description

Grilled Spicy Honey Lime Chicken bursts with sweet, tangy, and smoky flavors, making it a perfect centerpiece for your next grill night.


Ingredients

  • 2 lb chicken thighs (boneless and skinless)
  • 1/3 cup honey (preferably local)
  • 1/4 cup lime juice (freshly squeezed)
  • 2 tbsp chili powder (adjust to spice preference)
  • 4 cloves garlic (minced)
  • 2 tbsp olive oil (for marinade)
  • 1 tsp salt (use kosher if possible)
  • 1/4 cup cilantro (chopped) — optional


Instructions

  1. Pat the chicken thighs dry with paper towels.
  2. Whisk together honey, lime juice, chili powder, minced garlic, olive oil, and salt until smooth.
  3. Place the chicken in a shallow dish or resealable bag and pour the marinade over it.
  4. Marinate in the refrigerator for at least 30 minutes and up to 4 hours.
  5. Preheat your grill to medium-high heat (about 400–450°F / 200–230°C).
  6. Remove the chicken from the marinade and grill for 4–6 minutes per side until internal temperature reaches 165°F (74°C).
  7. Let the chicken rest for 5 minutes before serving.
  8. Finish with remaining chopped cilantro and an extra squeeze of lime if desired.

Notes

For a lower-sugar option, reduce honey to 2 tablespoons. Never use leftover raw marinade unless it has been boiled.
