A healthy and quick meal featuring grilled chicken, vibrant broccoli, and a creamy garlic sauce, perfect for weeknight dinners.


Ingredients

  • 2 medium boneless, skinless chicken breasts
  • 4 cups fresh broccoli florets
  • 2 cups cooked brown rice (or quinoa)
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • Pinch of paprika (optional)
  • ½ cup plain nonfat Greek yogurt
  • 2 tbsp light mayonnaise
  • 2 garlic cloves, minced
  • 1 tbsp lemon juice
  • 12 tbsp water (to thin)


Instructions

  1. Preheat a grill or grill pan over medium-high heat. Season the chicken breasts with salt, pepper, and optional paprika. Grill for 6–7 minutes on each side until cooked through.
  2. Let the grilled chicken rest for a few minutes and then slice it into strips.
  3. Steam the broccoli florets for about 4–5 minutes until bright green and just tender.
  4. In a small bowl, whisk together Greek yogurt, light mayonnaise, minced garlic, lemon juice, and water until smooth. Season with salt and pepper.
  5. Divide the cooked rice among four bowls and top with sliced grilled chicken and steamed broccoli. Drizzle with creamy garlic sauce before serving.

Notes

Marinate the chicken for added flavor. Steam broccoli instead of boiling to maintain its bright color and nutrients.
