Description

Juicy, tender chicken coated in BBQ sauce, perfect for summer gatherings.


Ingredients

  • 1 and 3/4 lbs chicken tenderloins or boneless skinless chicken breasts
  • 1/4 cup vegetable oil
  • 3 cloves garlic, minced
  • 1 and 1/4 teaspoons salt
  • 1 tablespoon packed light brown sugar
  • 2 teaspoons smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/8 teaspoon cayenne pepper
  • About 1 cup store-bought barbecue sauce or homemade BBQ sauce


Instructions

  1. If you are using boneless skinless chicken breasts, place them in a 1-gallon zip lock bag. Using a meat mallet, pound the breasts gently to an even thickness of 1/2 inch. If using tenderloins, you can skip this step.
  2. In a large bowl, whisk together the vegetable oil, minced garlic, salt, brown sugar, smoked paprika, cumin, chili powder, and cayenne pepper until well combined.
  3. Place the chicken in the bowl with the marinade and use tongs to toss the chicken until it’s evenly coated. Cover the bowl and refrigerate. Allow it to marinate for at least 6 hours, or overnight for the best flavor.
  4. When ready to cook, preheat your grill to high heat and oil the grates.
  5. Grill the chicken, covered, for 2 to 3 minutes. Flip the chicken pieces over, brushing one side with barbecue sauce. Cook for an additional 2 to 3 minutes, keeping an eye on the cooking time, as tenderloins will cook faster than breasts.
  6. Once cooked through, transfer the chicken to a serving platter. Serve with the remaining barbecue sauce on the side.

Notes

Marinate for at least 6 hours for best results. Use a meat thermometer to ensure chicken is cooked thoroughly.
