Ingredients

  • 4 chicken thighs
  • 2 cups bell peppers, chopped (any color)
  • 1 red onion, sliced
  • 1 zucchini, sliced
  • 2 cups cherry tomatoes
  • 3 tablespoons olive oil
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Lemon wedges for serving


Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large baking sheet, arrange the chicken thighs in the center.
  3. Surround the chicken with the chopped vegetables.
  4. Drizzle olive oil over the chicken and vegetables.
  5. Sprinkle the oregano, garlic powder, salt, and pepper evenly across the chicken and vegetables.
  6. Toss the vegetables to coat them in the oil and seasonings.
  7. Bake for 30-35 minutes until the chicken is cooked through and the vegetables are tender.
