Description

Ingredients

  • 4 chicken thighs
  • 2 bell peppers (sliced)
  • 1 red onion (sliced)
  • 2 zucchinis (sliced)
  • 1 cup cherry tomatoes
  • 3 tablespoons olive oil
  • 2 cloves garlic (minced)
  • 1 tablespoon dried oregano
  • Salt and pepper to taste
  • Juice of 1 lemon


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine chicken thighs, bell peppers, red onion, zucchinis, and cherry tomatoes.
  3. Drizzle with olive oil, add garlic, oregano, salt, pepper, and lemon juice. Toss to coat.
