A delicious and wholesome Greek Sheet Pan Chicken that’s easy to prepare and packed with Mediterranean flavors.
Ingredients
- 4 chicken thighs
- 2 bell peppers (sliced)
- 1 red onion (sliced)
- 2 zucchinis (sliced)
- 1 cup cherry tomatoes
- 3 tablespoons olive oil
- 2 cloves garlic (minced)
- 1 tablespoon dried oregano
- Salt and pepper to taste
- Juice of 1 lemon
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine chicken thighs, bell peppers, red onion, zucchinis, and cherry tomatoes.
- Drizzle with olive oil, add garlic, oregano, salt, pepper, and lemon juice. Toss to coat.
- Spread the mixture onto a sheet pan in a single layer.
- Bake for 25-30 minutes or until the chicken is cooked through and vegetables are tender.
- Serve warm and enjoy!
Notes
For extra flavor, consider marinating the chicken or using bone-in thighs. Fresh herbs can enhance the dish when added prior to serving.
