Ingredients
- 4 Chicken breasts
- 2 tbsp Olive oil
- 3 cloves Garlic, minced
- 2 tbsp Lemon juice
- 1 tsp Salt
- 1/2 tsp Pepper
- 1 Cucumber, diced
- 2 Tomatoes, chopped
- 1 Red onion, sliced
- 1 Bell pepper, sliced
- 1 cup Feta cheese, crumbled
- 1 cup Tzatziki sauce
Instructions
- Marinate the chicken breast in olive oil, minced garlic, lemon juice, salt, and pepper for at least 30 minutes.
- Grill or cook the chicken until fully cooked, then slice.
- Prepare the tzatziki sauce by mixing yogurt, diced cucumber, garlic, lemon juice, salt, and herbs.
- Chop fresh veggies: cucumber, tomato, red onion, and bell pepper.
- Assemble the bowls by placing sliced chicken over a bed of fresh veggies and topping with tzatziki sauce and feta cheese.
Notes
Let the chicken marinate longer for more flavor. Use a grill for a smoky taste or a pan if easier. Feel free to add other veggies.
