Ingredients
- 2 chicken breasts
- 2 tablespoons olive oil
- Juice of 1 lemon
- 3 cloves garlic, minced
- Salt and pepper, to taste
- 1 cucumber, diced
- 1 tomato, diced
- 1/2 red onion, diced
- 1 red bell pepper, diced
- 1/2 cup feta cheese, crumbled
- 1 cup quinoa or brown rice
- 1 cup Greek yogurt
- 1/2 cucumber, grated
- 1 clove garlic, minced
- 1 tablespoon dill
- Juice of 1/2 lemon
- Fresh herbs (parsley or dill) for garnish
Instructions
- Marinate the chicken by combining olive oil, lemon juice, minced garlic, salt, and pepper in a bowl. Add the chicken breasts and coat thoroughly. Let marinate for at least 30 minutes.
- Preheat grill or oven. Grill or bake the chicken until cooked through (6-7 minutes per side on grill, or 20-25 minutes in oven). Let rest before slicing.
- Prepare tzatziki by mixing Greek yogurt, grated cucumber, minced garlic, dill, and lemon juice in a bowl. Adjust seasoning with salt as needed.
- Cook quinoa or rice according to package instructions.
- Assemble the bowls with a base of quinoa or rice, followed by sliced chicken, diced cucumber, tomato, onion, and bell pepper.
- Top with crumbled feta cheese and a dollop of tzatziki sauce.
- Garnish with fresh herbs and serve immediately.
Notes
For best flavor, marinate chicken longer if possible. Use fresh ingredients for optimal taste. Grilling adds a smoky flavor, but baking works well too.
