A flavorful and healthy meal featuring marinated chicken, fresh veggies, and creamy feta cheese, perfect for a quick weeknight dinner or meal prep.
Ingredients
- 4 Chicken breasts
- 2 tbsp Olive oil
- 3 cloves Garlic, minced
- Juice of 1 Lemon
- 1 tsp Oregano
- Salt, to taste
- Pepper, to taste
- 1 Cucumber, chopped
- 2 Tomatoes, chopped
- 1 Red onion, sliced
- 1 cup Feta cheese, crumbled
- Tzatziki sauce, for serving
Instructions
- Marinate the chicken breasts in olive oil, garlic, lemon juice, oregano, salt, and pepper for at least 30 minutes.
- Grill or bake the chicken until cooked through.
- While the chicken is cooking, prepare the fresh veggies: chop cucumber, tomatoes, and onion.
- In bowls, assemble the cooked chicken, fresh veggies, and sprinkle with feta cheese.
- Serve with homemade tzatziki sauce on the side.
Notes
Make extra marinade for more flavor; you can use it on veggies too! Store leftovers in an airtight container in the refrigerator for up to three days.
