Description

A flavorful and healthy meal featuring marinated chicken, fresh veggies, and creamy feta cheese, perfect for a quick weeknight dinner or meal prep.


Ingredients

  • 4 Chicken breasts
  • 2 tbsp Olive oil
  • 3 cloves Garlic, minced
  • Juice of 1 Lemon
  • 1 tsp Oregano
  • Salt, to taste
  • Pepper, to taste
  • 1 Cucumber, chopped
  • 2 Tomatoes, chopped
  • 1 Red onion, sliced
  • 1 cup Feta cheese, crumbled
  • Tzatziki sauce, for serving


Instructions

  1. Marinate the chicken breasts in olive oil, garlic, lemon juice, oregano, salt, and pepper for at least 30 minutes.
  2. Grill or bake the chicken until cooked through.
  3. While the chicken is cooking, prepare the fresh veggies: chop cucumber, tomatoes, and onion.
  4. In bowls, assemble the cooked chicken, fresh veggies, and sprinkle with feta cheese.
  5. Serve with homemade tzatziki sauce on the side.

Notes

Make extra marinade for more flavor; you can use it on veggies too! Store leftovers in an airtight container in the refrigerator for up to three days.
