A quick and easy gluten-free cinnamon roll made in a mug, perfect for satisfying your sweet cravings without the hassle of traditional baking.
Ingredients
- 1/4 cup gluten free pancake mix
- 1/4 tsp baking powder
- 2 tbsp almond milk (plus more, if needed)
- 1 tbsp maple syrup
- 1 tsp coconut oil
- Pinch of sea salt
- 2 tsp coconut sugar
- 1/4 tsp cinnamon
- 2 tbsp powdered sugar
- 1 tsp almond milk (for glaze)
Instructions
- In a greased shallow mug or a ramekin, combine all ingredients for the cinnamon roll and whisk together with a fork. If the batter is too thick, splash in some more almond milk until it resembles a thick pancake batter.
- In a separate bowl, make cinnamon sugar by mixing coconut sugar and cinnamon together.
- Sprinkle the cinnamon sugar evenly over the prepared batter.
- Using a knife or a chopstick, swirl the cinnamon sugar into the batter in a circular motion until evenly incorporated.

- Combine ingredients for the sugar glaze until smooth. Drizzle over the cinnamon roll.

Notes
Best enjoyed fresh, but you can store leftovers in the refrigerator for up to a day. Reheat in the microwave for a few seconds before enjoying again. Adjust sweetness with maple syrup and feel free to add nuts or chocolate chips for extra flavor.
