- 1 cup brown sugar, packed
- 1/2 cup granulated sugar

- 1 cup cream cheese, softened
- 1/4 cup granulated sugar (for filling)
- 1/2 tsp vanilla extract (for filling)
- Spiced sugar (for rolling cookies)
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix together the flour, baking soda, baking powder, ginger, cinnamon, nutmeg, cloves, and salt.
- In another bowl, cream together the softened butter, brown sugar, and granulated sugar until fluffy.
- Beat in the egg and vanilla extract.
- Gradually mix in the dry ingredients until everything is combined.
- In a separate bowl, mix cream cheese, sugar, and vanilla for the filling.
- Roll the cookie dough into small balls and flatten them slightly. Place a teaspoon of cheesecake filling in the center, then carefully wrap the dough around the filling.
- Roll each cookie in spiced sugar.
- Bake for 10-12 minutes on a parchment-lined baking sheet.
