Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup cream cheese, softened
  • 1/4 cup granulated sugar (for filling)
  • 1/2 tsp vanilla extract (for filling)
  • Spiced sugar (for rolling cookies)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix together the flour, baking soda, baking powder, ginger, cinnamon, nutmeg, cloves, and salt.
  3. In another bowl, cream together the softened butter, brown sugar, and granulated sugar until fluffy.
  4. Beat in the egg and vanilla extract.
  5. Gradually mix in the dry ingredients until everything is combined.
  6. In a separate bowl, mix cream cheese, sugar, and vanilla for the filling.
  7. Roll the cookie dough into small balls and flatten them slightly. Place a teaspoon of cheesecake filling in the center, then carefully wrap the dough around the filling.
  8. Roll each cookie in spiced sugar.
  9. Bake for 10-12 minutes on a parchment-lined baking sheet.
