Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1 large egg
- 1/4 cup molasses
- 1 teaspoon vanilla extract
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1/4 cup granulated sugar (for rolling)
- 1 teaspoon ground cinnamon (for rolling)
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, mix flour, baking soda, ginger, cinnamon, nutmeg, cloves, and salt.
- In another bowl, beat together butter, brown sugar, and granulated sugar until creamy.
- Add egg, molasses, and vanilla; mix until combined.
- Gradually add the flour mixture and stir until dough forms.
- In a separate bowl, mix cream cheese and powdered sugar until smooth.
- Scoop a tablespoon of dough, flatten it, place a teaspoon of cheesecake filling in the center, and wrap the dough around the filling, rolling it into a ball.
- Roll each ball in a mixture of granulated sugar and cinnamon.
- Place on a baking sheet and bake for 10-12 minutes.
- Allow to cool before serving.
