Description

Delightful holiday cookies that combine the warm spices of gingerbread with creamy cheesecake, perfect for gatherings.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/4 cup molasses
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/4 cup granulated sugar (for rolling)
  • 1 teaspoon ground cinnamon (for rolling)


Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix flour, baking soda, ginger, cinnamon, nutmeg, cloves, and salt.
  3. In another bowl, beat together butter, brown sugar, and granulated sugar until creamy.
  4. Add egg, molasses, and vanilla; mix until combined.
  5. Gradually add the flour mixture and stir until dough forms.
  6. In a separate bowl, mix cream cheese and powdered sugar until smooth.
  7. Scoop a tablespoon of dough, flatten it, place a teaspoon of cheesecake filling in the center, and wrap the dough around the filling, rolling it into a ball.
  8. Roll each ball in a mixture of granulated sugar and cinnamon.
  9. Place on a baking sheet and bake for 10-12 minutes.
  10. Allow to cool before serving.
