Description

A quick and easy gluten-free quesadilla recipe featuring creamy avocado and sharp cheddar, perfect for weeknight dinners.


Ingredients

  • 2 Gluten Free Tortillas
  • 1 cup Daiya Vegan Cheese
  • 1/2 cup King Arthur Gluten Free Flour Blend
  • 1 Fresh Avocado
  • 1/2 cup Bell Peppers, chopped
  • 1/2 cup Spinach, chopped


Instructions

  1. Heat a nonstick skillet over medium heat.
  2. Place one tortilla in the skillet.
  3. Spread avocado on the tortilla and sprinkle with cheese, peppers, and spinach.
  4. Top with the second tortilla.
  5. Cook for 2-3 minutes until the bottom is golden, then flip and cook for another 2-3 minutes.
  6. Remove from skillet, let sit for 1 minute, then slice and serve with salsa.

Notes
