Description

Delicious and healthy Garlic Parmesan Sweet Potato Wedges, perfect as a snack, side dish, or appetizer.


Ingredients

  • 3 medium or 2 large sweet potatoes
  • 3 tbsp extra virgin olive oil
  • 4-5 cloves fresh garlic, minced
  • 1/2 cup Parmesan cheese, grated, divided
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp dried oregano
  • 1/4 tsp red pepper flakes (optional)
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper, freshly ground
  • 2 tbsp fresh parsley, chopped (for garnish)


Instructions

  1. Preheat oven to 400°F (200°C). Line two baking sheets with parchment paper.
  2. Scrub sweet potatoes clean and pat dry. Slice each sweet potato in half lengthwise, then cut into 2-3 long spears and then crosswise into 1/2 to 3/4 inch thick wedges.
  3. (Optional) Soak cut wedges in cold water for 20-30 minutes, then drain and pat dry.
  4. In a large bowl, combine minced garlic and olive oil.
  5. In a separate bowl, mix smoked paprika, garlic powder, onion powder, oregano, red pepper flakes, sea salt, and black pepper.
  6. Add sweet potato wedges to garlic oil and toss to coat.
  7. Sprinkle spice mixture and 1/4 cup Parmesan over wedges and toss to coat.
  8. Spread wedges in a single layer on baking sheets and roast for 15 minutes.
  9. Flip wedges, return to oven, and roast for another 10-15 minutes until tender and browned.
  10. Remove from oven, sprinkle remaining Parmesan, and bake for an additional 5-7 minutes until golden and bubbly.
  11. Garnish with chopped parsley and serve immediately.

Notes

These wedges are best enjoyed fresh out of the oven. Serve with dipping sauces like ketchup or ranch.
