Description

A comforting dish of tender chicken and flavorful garlic with creamy parmesan cheese, cooked effortlessly in a crockpot.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1.5 pounds baby potatoes, halved
  • 1 cup chicken broth
  • 1/2 cup grated parmesan cheese
  • 4 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Prepare the Potatoes and Garlic: Wash the baby potatoes and cut them in half. Mince the garlic cloves and set aside.
  2. Season the Chicken: Rub the chicken breasts with olive oil, Italian seasoning, salt, black pepper, and red pepper flakes (if using) until evenly coated.
  3. Place Ingredients in Crockpot: Layer the halved potatoes in the bottom of the crockpot, then place the seasoned chicken breasts on top.
  4. Add Chicken Broth: Pour the chicken broth over the chicken and potatoes, ensuring everything is well coated.
  5. Add Garlic and Cheese: Sprinkle minced garlic evenly over the chicken, then add the grated parmesan cheese on top.
  6. Cook the Mixture: Cover the crockpot and cook on low for 6–7 hours or high for 3–4 hours, until the chicken is tender and fully cooked.
  7. Check Doneness: Ensure the chicken reaches an internal temperature of 165°F (75°C) and the potatoes are fork-tender.
  8. Serve and Enjoy: Gently remove the chicken and potatoes from the crockpot, spooning any remaining sauce over the top.
  9. Garnish: Chop fresh parsley and sprinkle over the dish before serving.

Notes

For extra flavor, marinate the chicken in olive oil and seasonings for a few hours before cooking.
