Ingredients

  • 4 boneless, skinless chicken breasts
  • 4 medium potatoes, diced
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the olive oil, minced garlic, Italian seasoning, salt, and pepper.
  3. Add the chicken breasts to the bowl and coat them well with the mixture.
  4. On a sheet pan, arrange the diced potatoes in an even layer, then place the seasoned chicken on top.
  5. Sprinkle the grated Parmesan cheese over the chicken and potatoes.
  6. Bake for about 25-30 minutes until the chicken is cooked through (internal temperature of 165°F or 75°C) and the potatoes are tender.
