Description
Garlic Herb Roasted Potatoes are a delightful side dish with a crispy exterior and fluffy interior, perfect for complementing any entrée.
Ingredients
- 2 pounds Yukon Gold potatoes
- 4 tablespoons extra-virgin olive oil
- 6 garlic cloves, minced
- 2 tablespoons fresh rosemary, finely chopped
- 1 tablespoon fresh thyme leaves
- 1 teaspoon kosher salt
- ½ teaspoon freshly cracked black pepper
- 2 tablespoons fresh parsley for finishing
- Optional: 2 tablespoons grated Parmesan cheese
- Optional: 1 teaspoon smoked paprika
- Optional: ½ teaspoon garlic powder
Instructions
- Preheat your oven to 425°F (220°C) and line a large rimmed baking sheet with parchment paper for easy cleanup.
- Wash and scrub the potatoes thoroughly, then cut them into 1½-inch chunks. Be sure to pat them dry completely with paper towels.
- Boil the potatoes in salted water for 8-10 minutes until they become fork-tender. Drain the potatoes and let them steam for 2-3 minutes, shaking gently to rough up their edges.
- Mix together the olive oil, minced garlic, rosemary, thyme, salt, and pepper in a large bowl. Toss the roughed-up potatoes in the mixture until they’re fully coated.
- Spread the potatoes out in a single layer on your prepared baking sheet, avoiding overcrowding them.
- Roast the potatoes for 45-50 minutes, flipping them halfway through, until golden brown and crispy on the outside.
- Remove from the oven and sprinkle with fresh parsley and optional Parmesan cheese while still hot.
Notes
Consider adding a pinch of red pepper flakes for a spicy variation or toss in some lemon zest for a fresh twist.
