Description

Garlic Herb Roasted Potatoes are a delightful side dish with a crispy exterior and fluffy interior, perfect for complementing any entrée.


Ingredients

  • 2 pounds Yukon Gold potatoes
  • 4 tablespoons extra-virgin olive oil
  • 6 garlic cloves, minced
  • 2 tablespoons fresh rosemary, finely chopped
  • 1 tablespoon fresh thyme leaves
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly cracked black pepper
  • 2 tablespoons fresh parsley for finishing
  • Optional: 2 tablespoons grated Parmesan cheese
  • Optional: 1 teaspoon smoked paprika
  • Optional: ½ teaspoon garlic powder


Instructions

  1. Preheat your oven to 425°F (220°C) and line a large rimmed baking sheet with parchment paper for easy cleanup.
  2. Wash and scrub the potatoes thoroughly, then cut them into 1½-inch chunks. Be sure to pat them dry completely with paper towels.
  3. Boil the potatoes in salted water for 8-10 minutes until they become fork-tender. Drain the potatoes and let them steam for 2-3 minutes, shaking gently to rough up their edges.
  4. Mix together the olive oil, minced garlic, rosemary, thyme, salt, and pepper in a large bowl. Toss the roughed-up potatoes in the mixture until they’re fully coated.
  5. Spread the potatoes out in a single layer on your prepared baking sheet, avoiding overcrowding them.
  6. Roast the potatoes for 45-50 minutes, flipping them halfway through, until golden brown and crispy on the outside.
  7. Remove from the oven and sprinkle with fresh parsley and optional Parmesan cheese while still hot.

Notes

Consider adding a pinch of red pepper flakes for a spicy variation or toss in some lemon zest for a fresh twist.
