Description

A delightful dish featuring tender chicken breasts infused with aromatic garlic and fresh herbs, perfect for any occasion.


Ingredients

  • 4 boneless skinless chicken breasts
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh thyme leaves
  • 2 tablespoons butter
  • 1 cup chicken broth
  • 2 pounds russet potatoes
  • ½ cup heavy cream
  • 2 tablespoons brown sugar
  • 1 tablespoon balsamic vinegar


Instructions

  1. Pat the chicken breasts dry and season with salt and pepper. Rub with garlic and herb mixture, then let rest for 10 minutes.
  2. Heat olive oil in a skillet over medium-high heat. Sear chicken for 5–6 minutes until golden brown, then flip and cook for another 5–6 minutes.
  3. Add butter to the pan and baste the chicken until it reaches an internal temperature of 165°F. Remove and keep warm.
  4. In the same skillet, add brown sugar and balsamic vinegar, cooking for 2 minutes. Add chicken broth and reduce for 5–7 minutes.
  5. Peel and chop potatoes, boiling until fork-tender. Mash with butter and heavy cream, seasoning to taste.
  6. Serve chicken on a bed of mashed potatoes drizzled with sauce, garnished with fresh herbs if desired.
