Description

A delicious, comforting dish featuring orzo, earthy mushrooms, and vibrant spinach, all enveloped in creamy garlic butter.


Ingredients

  • 1 tablespoon olive oil
  • 8 oz baby bella mushrooms, sliced
  • 1 cup orzo, uncooked
  • 2 cups chicken broth
  • 5 cloves garlic, minced
  • ½ teaspoon Italian seasoning
  • ½ teaspoon paprika
  • ¼ teaspoon salt
  • 5 oz fresh spinach
  • ½ cup heavy cream
  • ¼ teaspoon red pepper flakes


Instructions

  1. Heat the olive oil in a large skillet over medium heat and sauté the sliced mushrooms until golden brown and fragrant.
  2. Remove half of the mushrooms from the skillet and set aside for garnishing.
  3. Add the uncooked orzo, chicken broth, minced garlic, Italian seasoning, paprika, and salt to the skillet. Stir well.
  4. Bring to a simmer, cooking for about 5 to 10 minutes until the orzo is almost tender.
  5. Add the fresh spinach and cook until it wilts, about a couple of minutes.
  6. Stir in the heavy cream and reserved mushrooms, heating through on low until well combined.
  7. Serve hot, garnishing with red pepper flakes and optional grated Parmesan cheese.

Notes

Use fresh spinach for better texture. Experiment with different mushrooms for varied flavors.
