A delicious, comforting dish featuring orzo, earthy mushrooms, and vibrant spinach, all enveloped in creamy garlic butter.
Ingredients
- 1 tablespoon olive oil
- 8 oz baby bella mushrooms, sliced
- 1 cup orzo, uncooked
- 2 cups chicken broth
- 5 cloves garlic, minced
- ½ teaspoon Italian seasoning
- ½ teaspoon paprika
- ¼ teaspoon salt
- 5 oz fresh spinach
- ½ cup heavy cream
- ¼ teaspoon red pepper flakes
Instructions
- Heat the olive oil in a large skillet over medium heat and sauté the sliced mushrooms until golden brown and fragrant.
- Remove half of the mushrooms from the skillet and set aside for garnishing.
- Add the uncooked orzo, chicken broth, minced garlic, Italian seasoning, paprika, and salt to the skillet. Stir well.
- Bring to a simmer, cooking for about 5 to 10 minutes until the orzo is almost tender.
- Add the fresh spinach and cook until it wilts, about a couple of minutes.
- Stir in the heavy cream and reserved mushrooms, heating through on low until well combined.
- Serve hot, garnishing with red pepper flakes and optional grated Parmesan cheese.
Notes
Use fresh spinach for better texture. Experiment with different mushrooms for varied flavors.
