Ingredients

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1.5 lbs baby red potatoes, quartered
  • 1 lb whole carrots, peeled and cut into chunks
  • 6 cloves garlic, minced
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 tbsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp chopped parsley (optional, for garnish)
  • 1/2 cup chicken broth


Instructions

  1. Toss the chicken, quartered baby red potatoes, and carrot chunks into your slow cooker.
  2. In a separate bowl, combine the melted butter, minced garlic, Italian seasoning, salt, pepper, and chicken broth.
  3. Pour the garlic butter mixture over the meat and veggies and stir gently to coat.
  4. Cover the slow cooker and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
  5. Garnish with fresh parsley if desired and serve warm.
