Description

Bright, simple bars that showcase juicy nectarines in a wholesome oat-and-almond base, perfect for breakfast, snacks, or dessert.


Ingredients

  • 4 ripe nectarines, diced
  • 1 cup rolled oats
  • 1/2 cup almond flour
  • 1/4 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt


Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
  2. Mix the oats, almond flour, cinnamon, and salt in a bowl.
  3. Combine the melted coconut oil, honey (or maple syrup), and vanilla in another bowl.
  4. Add the wet ingredients to the dry ingredients and mix until combined. Fold in the diced nectarines.
  5. Pour the mixture into the prepared baking dish and spread evenly.
  6. Bake for 25–30 minutes or until golden brown.
  7. Let cool, then cut into bars and serve.

Notes

Use ripe but firm nectarines to hold their shape. For a vegan version, swap honey for maple syrup.
