Description

A festive cake combining mixed dried fruits and tart cranberries, perfect for holiday celebrations.


Ingredients

  • 2 cups mixed dried fruit (e.g., raisins, currants, apricots)
  • 1 cup fresh or frozen cranberries
  • 1/2 cup orange juice
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup chopped nuts (optional)


Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a cake pan.
  2. In a bowl, combine the dried fruit and cranberries with orange juice and let soak for about 30 minutes.
  3. In another bowl, whisk together flour, baking powder, baking soda, and spices.
  4. In a large mixing bowl, cream the butter and brown sugar until fluffy.
  5. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla.
  6. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  7. Fold in the soaked fruit (with juice if desired) and nuts if using.
  8. Pour the batter into the prepared pan and smooth the top.
  9. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  10. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

Serve warm or at room temperature, optionally with whipped cream or vanilla ice cream. Dust with powdered sugar for a festive touch.
