A beloved takeout classic, this homemade Publix-style fried chicken features a crispy coating and juicy interior, perfect for family meals or gatherings.
Ingredients
- 6 chicken pieces (legs, thighs, or breast)
- 2 cups buttermilk
- 2 cups all-purpose flour
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon cayenne pepper (optional)
- 1 egg
- 1 tablespoon hot sauce (optional)
- Vegetable oil for frying
Instructions
- Pat the chicken pieces dry with paper towels.
- In a bowl or zip-top bag, combine buttermilk, egg, and hot sauce (if using). Whisk to blend.
- Add chicken pieces, ensuring they are submerged. Cover and refrigerate for at least 2 hours, ideally overnight.
- Mix flour, paprika, garlic powder, onion powder, salt, black pepper, and cayenne in a dish.
- Set a wire rack over a tray for resting coated pieces.
- Heat vegetable oil in a deep pot over medium heat to 325–350°F.
- Remove chicken from marinade, dredge in seasoned flour, and set aside on the wire rack.
- Fry chicken in batches until golden brown and cooked through, 10–18 minutes depending on size. Maintain oil temperature.
- Transfer fried chicken to a wire rack to drain and rest for 5–10 minutes before serving.
- Serve hot with your favorite sides.
Notes
For extra crispy coating, double-dip chicken in buttermilk and flour. Always ensure oil temperature is correct to avoid greasy chicken.
