Ingredients
- 4 ears of fresh corn
- 1 ripe avocado, diced
- 2 cups cherry tomatoes, halved
- 1 small red onion, finely chopped
- 3 tablespoons lime juice
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons olive oil
- Salt, to taste
- Pepper, to taste
Instructions
- In a large bowl, combine fresh corn, diced avocado, chopped tomatoes, and finely chopped red onion.
- In a separate small bowl, whisk together lime juice, chopped cilantro, olive oil, salt, and pepper to create the dressing.
- Pour the dressing over the salad and toss gently to combine.
- Serve chilled or at room temperature.
Notes
Letting the salad rest for 10–20 minutes allows flavors to meld. For fresh corn, look for bright green husks and plump kernels.
