Ingredients
- 2 cups fresh cherries, pitted and halved
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened (for the cake)
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 cup buttermilk
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups powdered sugar (for the frosting)
- 1/2 cup unsalted butter, softened (for the frosting)
- 2 tablespoons heavy cream (for the frosting)
Instructions
- Preheat your oven to 350°F (175°C) and grease a cake pan.
- Cream the butter and sugar together until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract.
- Combine the flour, baking powder, and baking soda in another bowl.
- Gradually add the dry mixture to the wet ingredients, alternating with the buttermilk.
- Fold in the cherries gently.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 30–35 minutes or until a toothpick comes out clean.
- For frosting, beat together butter and powdered sugar until creamy and smooth.
- Once the cake has cooled, spread the frosting over the top and serve.
Notes
Consider tossing cherries in flour to help them stay suspended in the cake batter. Cool the cake fully before frosting to avoid melting.
