French Onion Potatoes

Description

A comforting side dish blending the rich flavors of caramelized onions with hearty baby potatoes, topped with melted cheese.


Ingredients

  • 2 lbs baby potatoes, halved
  • 3 tablespoons olive oil
  • 1 packet French onion soup mix
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded Gruyère or Swiss cheese
  • 2 tablespoons fresh parsley, chopped


Instructions

  1. Preheat your oven to 400°F (200°C) and grease a baking dish.
  2. In a large bowl, toss the halved potatoes with olive oil and the French onion soup mix until well coated.
  3. Spread the potatoes in the greased baking dish with the cut side facing up. Roast for 35-40 minutes, or until tender and golden brown.
  4. Once cooked, sprinkle mozzarella and Gruyère cheese evenly over the top.
  5. Return the dish to the oven and bake for an additional 5-7 minutes, or until the cheese is bubbly and melted.
  6. Remove from oven, garnish with fresh parsley, and serve hot. Optionally broil for 2-3 minutes until the cheese is golden brown.

Notes

For extra flavor, consider sautéing some onions before mixing, and feel free to add other vegetables or cheese types for variations.
