Description
A comforting side dish blending the rich flavors of caramelized onions with hearty baby potatoes, topped with melted cheese.
Ingredients
- 2 lbs baby potatoes, halved
- 3 tablespoons olive oil
- 1 packet French onion soup mix
- 1 cup shredded mozzarella cheese
- 1/2 cup shredded Gruyère or Swiss cheese
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat your oven to 400°F (200°C) and grease a baking dish.
- In a large bowl, toss the halved potatoes with olive oil and the French onion soup mix until well coated.
- Spread the potatoes in the greased baking dish with the cut side facing up. Roast for 35-40 minutes, or until tender and golden brown.
- Once cooked, sprinkle mozzarella and Gruyère cheese evenly over the top.
- Return the dish to the oven and bake for an additional 5-7 minutes, or until the cheese is bubbly and melted.
- Remove from oven, garnish with fresh parsley, and serve hot. Optionally broil for 2-3 minutes until the cheese is golden brown.
Notes
For extra flavor, consider sautéing some onions before mixing, and feel free to add other vegetables or cheese types for variations.
