Description

This fluffy pancake recipe is quick and easy, perfect for a warm and satisfying breakfast that everyone will love.


Ingredients

  • 2 cups / 300g all-purpose flour
  • 4 tsp baking powder
  • 1/4 cup / 55g white sugar
  • Pinch of salt
  • 1 egg
  • 1 3/4 cups / 435 ml milk
  • 1 tsp vanilla extract (optional)
  • 4 tsp butter for cooking


Instructions

  1. Whisk together the flour, baking powder, sugar, and salt in a large mixing bowl.
  2. Add egg, milk, and optional vanilla extract, and whisk until smooth (about 30 seconds).
  3. Heat a non-stick skillet over medium to medium-high heat.
  4. Melt 1/2 teaspoon of butter in the skillet, wiping most off with a paper towel.
  5. Pour 1/4 cup of batter into the pan, swirling to create a circle approximately 4.5 inches in diameter.
  6. Cook until bubbles form on the surface, then flip and cook for about 30 seconds more until golden brown.
  7. Repeat, cooking 2-3 pancakes at a time, re-buttering skillet as needed.
  8. If keeping pancakes warm, place them in a low oven while cooking the rest.

Notes

Don’t overmix the batter for best results. Use fresh baking powder and monitor skillet temperature for perfect cooking.
