Description

Ingredients

  • 4 large eggs
  • 2 tablespoons milk
  • Salt and pepper to taste
  • 2 tablespoons butter
  • 1/4 cup shredded cheese (optional)
  • 4 strips of pork bacon (or smoked turkey bacon)
  • 1 cup mixed greens
  • 1 tablespoon olive oil
  • 1 tablespoon vinegar (optional)
  • Creamy sauce (such as hollandaise or a simple cream sauce)


Instructions

  1. In a bowl, whisk together eggs, milk, salt, and pepper until well combined.
  2. In a skillet, cook the bacon until crispy, then remove and drain on paper towels.
  3. In the same skillet, add butter over medium heat.
  4. Pour in the egg mixture and let it sit for a few seconds, then gently stir to form curds.
  5. If using, sprinkle cheese over the top and let it cook until the eggs are set but still fluffy.
  6. Fold the omelette in half and slide it onto a plate.
  7. Prepare the salad by tossing mixed greens with olive oil, vinegar, salt, and pepper.
  8. Serve the omelette hot, topped with creamy sauce and bacon on the side, accompanied by the fresh salad.
