Ingredients
- 1 cup cottage cheese
- 4 eggs
- 1/2 teaspoon vanilla extract

Instructions
- In a mixing bowl, combine the cottage cheese, eggs, vanilla extract, baking powder, and salt. Blend until smooth and creamy.
- Heat a skillet over medium heat and add butter or oil to coat the pan.
- Pour small amounts of the batter onto the skillet to form pancakes.
- Cook until bubbles form on the surface, about 2 to 3 minutes.
- Carefully flip the pancakes and cook until golden brown, another 2 to 3 minutes.
- Serve warm with your favorite toppings.
